A Perfect Salmon Recipes

Ingredients

Fresh Salmon fillet (approximately 1 kg)

1/2 cup of Honey

1 tablespoon soy sauce

2 tablespoon brandy

1/4 white wine

1 tablespoon shopped fresh ginger

2 - 4 small chillies, depending on taste

3 crashed kaffir lime leaves

15 chopped juniper berries

1 tablespoon chopped fresh coriander

1/4 cup vinegar

1 tablespoon  freshly chopped basil


Method:

Mix all the ingredient together. if using dried kaffir lime leaves, you may wish to pre-soak them before using in the marinade. Remove the skin from the Salmon and the bones. use kitchen tweezers to remove the fine salmon bones. 

Pour the marinade over the salmon and leave for about 4 hours. cook the side of the salmon on a hot barbecue for three minutes on each side: the fish should be medium rare.

the remain of the marinade can be served over the cooked salmon.
